And although it’s a good match up, I wouldn’t think too many people would be thrilled about it being the main event. Still a few months though.

And then someone gets get blasted in a potential KOTY that I missed live bcuz the “names” were a let down. I initially missed Struve getting leveled in segments like an old casino being demolished bcuz I didn’t know his opponent. And I missed seeing Etim get foot slapped to hell bcuz I didn’t think Barboza had that in him. I’m watching, bcuz these are the cards that often uncover the hidden gems. But then again maybe I’m a junkie…

I’m gonna make some chili tonight and never tried it before. What do you use for your tomato base? I wanna use Rotel and tomato sauce. Some people say stewed tomatoes, some people just chop up/crush tomato and throw it in. What do you think tastes better? Also, almost every recipe I see says use “Kidney Beans” but I hate those. What about just a can of chili beans from the grocery store?

The last time I made chilli, I used tomatos and chilli peppers from my back yard. If I was making it from scrathc , I would use the Rotelle tomatos with green chilis, low sodium. I think what is listed as “chilli” beans are actually kidney beans in sauce. I like to use all kinds of beans in chili, but some people are purists and only want kidney. I love black beans, navy beans and pinto beans in chili. I have even had chili with lima beans, but those are too gritty for me. I always started with dry beans and soaked them overnight.

but that means you are not allowing the flavors to merge effectively.
Anything that I consider soup/stew, I usually make over at least two days, but I make most of my stock from scratch, so it needs to cool to remove the fat and then clarified so it doesn’t look so cloudy. Like I said, the last time I made chili was 100% from scracth and 100% local. Tomatoes, chilis (raw and roasted) garlic (fresh and roasted) fresh from my backyard. Beef from the farmer up the street and beans from the farmers market. Slow cooked for about 12 hours.
The best soups or stews I have ever made typically have 5 or 6 ingredients, but are all from scratch. It is never about how many flavors, but how those flavors interact with each other.

I don’t have a garden so my shit’s gonna have canned stuff in it, the beans, green chili and the rotel. I wanna put in beef & kielbasa, after reading your post I’m thinkin, black beans & kidney beans. Onion, green pepper, green chili, jalepenos. Now, I was gonna saute the beef with the onion and green pepper, throw my seasoning on it, cook the kielbasa, then throw everything in a pot and let it cook on the stove for like 30-40 mins. But you’re saying cook it for like a day in a slow cooker. So what do you do? Cook the meat like I’m gonnna do, throw it in with everything and just leave it on low for 24 hrs??

I bring to a boil on the stove (to kill any bacteria) then transfer to a slow cooker.
I brown the meat first. The kilbo is a good idea that I haven’t done, but I would grill it and slice it thin to add into the pot to boil. The charred flavor will more than make up for the oil lost on the grill.
If I were you, I would double the kilbo on the grill tonight, eat sammy’s, then use the remainder for chilli you make before you go to work tomorrow, then thrwo in the slow cooker til you get home.

you could do an Asiago cheesy garlic bread.
I have done homemade tortillas (corn and wheat flour) as well. I would imagine any good flat bread would work if you give a nice thin coating of olive oil and bake until a little crisp.
